Cavan Bakery - Artisan Baker

Contract Type: Full-time, Permanent
Schedule: Flexible day and night rota (Sunday–Saturday, including occasional weekends)

We are looking for an experienced Artisan Baker to join our production team and help us maintain our commitment to quality, consistency, and authenticity.
Core Responsibilities
Production
Produce a full range of breads in the correct quantities and varieties according to the daily production schedule.
Competently mix, shape, and bake a variety of doughs to specification.
Follow all bakery production processes with precision and consistency.
Communicate proactively with the Bakery Operations Manager regarding any production challenges or anticipated issues.
Quality Control
Ensure the highest standards of product quality are maintained at all times.
Deliver products that are consistent in appearance, size, weight, finish, and taste.
Identify and report any products that do not meet standards; only release such products with the approval of the Bakery Operations Manager.
Ingredient Management
Use ingredients responsibly and efficiently, ensuring minimal waste.
Maintain the freshness, hygiene, and correct storage of all ingredients.
Ensure ingredients are used in the proper rotation to uphold product quality and safety.
Hygiene & Maintenance
Maintain a clean, organised, and hygienic work environment in accordance with food safety standards.
Ensure all bakery equipment and machinery are clean, well-maintained, and in good working order.
Report any repairs or maintenance needs promptly to the Bakery Manager.
Complete all cleaning tasks as directed and ensure hygiene schedules are followed diligently.
Communication
Communicate clearly and respectfully with the Bakery Operations Manager and wider team.
Raise any concerns, production challenges, or improvement ideas constructively and in a timely manner.
Requirements
Experience is essential – previous work in artisan or commercial bakery production is required.
Solid understanding of food hygiene and bakery safety standards.
Knowledge of hand moulding techniques and traditional bread-making methods.
Experience or understanding of sourdough production is highly desirable.
A strong work ethic, attention to detail, and passion for artisan baking.
Flexibility to work a variety of shifts, including nights and weekends.
