AB Mauri partners with Nutris to drive fava bean ingredient innovation and solutions

AB Mauri, a leader in bakery ingredients and innovation, and Nutris, a leader in fava-based protein and starch production, have announced a strategic technical and supply collaborative agreement to develop next-generation ingredient solutions for the UK and Ireland.

The partnership aims to accelerate the use of fava beans in mainstream food applications, creating ingredient solutions that improve performance, nutrition and sustainability across the UK and Irish markets.

Founded in 2019 by Zvonimir Sedlic, Nutris is a Croatia-based foodtech company pioneering the use of fava beans as a plant protein source. It is the first company worldwide to build a dedicated fava bean processing facility at this scale. Its innovative process gently fractionates fava into protein, starch and fibre - delivering clean-label, functional ingredients for modern food applications. With a 45,000-tonne facility now operational, Nutris is reshaping the European plant protein landscape through a fully integrated, traceable and regenerative value chain - from local farmers to functional ingredients.

AB Mauri is a renowned specialist in industrial product ingredient solutions, focused on the formulation, design and science behind the art of baking and food. With a significant manufacturing footprint across the UK, it offers a comprehensive range of yeast and ingredient solutions to multiple customer markets. AB Mauri UK&I is committed to partnerships that leverage joint capabilities to increase the use and acceptance of fava-based ingredients and end-product solutions.

Together, AB Mauri and Nutris will leverage their talent and resources to develop and implement technically advanced fava-bean-based ingredient solutions through application and design across a number of product groups in the UK and Ireland.

Jim Hawkridge, Product Development & Technical Director, AB Mauri, comments:
“It is clear to AB Mauri that Nutris is an organisation not only extremely committed to sustainable practices, but one that has also designed a highly advanced technical process realising significant opportunities in fava-bean-based protein. We are delighted to make this announcement. We are equally enthused about the forthcoming commercial and technical opportunities that can be realised with Zvonimir and the Nutris team as a result.”

Zvonimir Sedlic adds: “At Nutris, we believe fava beans are one of the most underutilised yet powerful crops for sustainable food systems. Partnering with AB Mauri - a true innovation leader in bakery - creates an exciting opportunity to bring the functional and clean-label benefits of fava to mainstream applications. We’re thrilled to collaborate and scale solutions that deliver better performance, nutrition, and sustainability across UK and Irish markets.”

David Cooper, Managing Director, AB Mauri, concludes: “It is no secret that AB Mauri has a clear development model with a rich heritage centred on strategic collaboration with stakeholders. The partnership we are jointly announcing with Nutris today is a clear indication of this. We are excited to maintain our traction to date and continue unlocking potential in baking and wider food markets.”
